pistachio pie cookies

 

happy weekend!

i’m a HUGE fan of all things pistachio– pistachio ice cream, pistachio pie, pistachio muffins, pistachios in general. so when i found a recipe for pistachio pie cookies on pinterest, i KNEW i had to try them.

here’s the recipe–

you will need:

• 1 cup butter
• 1 cup sugar
• 2 eggs
• 1 box instant pistachio pudding
• 1/2 tsp salt
• 1 tsp baking soda
• 2 cups flour
• 1/2- 3/4cup chopped pistacho nuts
• 1 cup white chocolate chips

you will need to preheat the oven to 350 degrees fahrenheit.

first, you mis together the butter and sugar with a mixer for about two minutes.

you will then add in the eggs and continue mixing.

once that is all mixed together nicely, it’s time to add in the pistachio pudding (the best part).

following the pudding, add in the salt, baking soda and flower. mix until smooth and then add the chocolate chips and pistachio nuts.

now, i made my cookies pretty big, they seemed to expand quite a bit in the oven. once you have made little balls of them and spaced them evenly onto the cookie sheet, you will bake them for about 10-12 minutes.

and VOILA!
