happy weekend! i’m a HUGE fan of all things pistachio– pistachio ice cream, pistachio pie, pistachio muffins, pistachios in general. so when i found a recipe for pistachio pie cookies on pinterest, i KNEW i had to try them. here’s the recipe– you will need: 1 cup butter 1 cup sugar 2 eggs 1 box instant pistachio pudding 1/2 tsp salt 1 tsp baking soda 2 cups flour 1/2- 3/4cup chopped pistacho nuts 1 cup white chocolate chips you will need to preheat the oven to 350 degrees fahrenheit. first, you mis together the butter and sugar with a mixer for about two minutes. you will then add in the eggs and continue mixing. once that is all mixed together nicely, it’s time to add in the pistachio pudding (the best part). following the pudding, add in the salt, baking soda and flower. mix until smooth and then add the chocolate chips and pistachio nuts. now, i made my cookies pretty big, they seemed to expand quite a bit in the oven. once you have made little balls of them and spaced them evenly onto the cookie sheet, you will bake them for about 10-12 minutes. and VOILA! enjoy 🙂 xo, courtney raf

hello! i’ve mention before, but marble is SUPER trendy at the moment and i am loving it! i’ve been in my apartment for about 4 months now, but putting everything together has taken some time. i’m still always on the look for cheap diy’s. while browsing on pinterest, i came across these super cute marble diy coasters from a girl named Amy’s blog. you can follow her on instagram at @homeyohmy. you can also follow me on instagram @courtneyraf3 🙂 now, essentially, you could do these with any shape or color and even size. i really loved the black and white, so i stuck with those basic colors. all you need is: clay (oven safe and colors of your choice) x-acto knife rolling pin i bought my clay from michael’s and it was about 10$ for a pound. the first thing i did was roll out the base color so it looked like a hot dog. secondly, i placed dots of the white in random places around the entire piece of clay. the third step is twisting the clay so that the white dots spread out and give that marbled look. this part was kind of tricky and really took some time to get used to. fourth, i rolled the clay into a ball and then flattened it out so i could create my shape. i decided to make two round ones and two hexagon ones for variety. you can make these any shape or size you would like. after creating my shapes, i popped these babies into the oven for about 20 minutes at 275 degrees fahrenheit. once they’ve cooled, you can add some adhesive felt to the bottom, so that they slide around easily on the surface you place them. i thought these were super easy and cute! i’m not going to lie, i don’t usually use a coster for my glasses, but it was a fun way to spend my sunday afternoon 🙂 leave any diy suggestions you have below! xo, courtney raf
